At Chapel Down, which prides itself in offering ‘a wine for everyone’, you’ll also find
dynamic winemaker Josh Donaghay-Spire doing impressive things with Chardonnay,
and pushing the boundaries with sparkling wines. However, I took the Pinot connection a little further by creating a cocktail that is based around gin and red wine using the Chapel Down Union Red. Notes of rhubarb and orange (as you’d expect) are joined by aromas of raspberry, fresh blackcurrant and Parma violet that carry through to the palate, where they join with a satisfying juniper hit and spice notes. The pack contains a paired mixer plus two 100ml bottles of each gin, as well as a recording of a live event with chef Simon Rimmer, discussing the production methods and tasting notes behind the two gins. With a huge haul of worthy wines Chapel Down has always been a hero winery in the UK
and I am constantly amazed at the diversity and excellence of their portfolio.
