I don’t need to wax lyrical about apples as everyone who has ever been near a grocery or supermarket is familiar with them. That said, modern cultivars are large, juicy and sweet. Wild apples tend to be small, hard and very, very sour. Try a true crab apple and, to quote a friend of mine, “it’ll turn your face inside out!”. Crab and feral apples do contain a good amount of pectin though, which will help set any jam or jelly.
