About this deal

If you love cheesy fries, then you’re going to love this; it’s so much better. I love making dirty fries because:

Fermented tofu : Amy Poon, from sauce maker Poon’s, swears by fermented tofu mashed with sesame oil over fries. Preserved in brine, rice wine and seasonings, and available in Chinese supermarkets, the tofu is, she says, “deliciously complex: tangy, faintly cheesy, sweet, salty, creamy. Think roquefort.” Sprinkle over sugar, chillies and chopped spring onions to taste. Ideal for dipping and available in numerous flavours - from original to indulgent and interesting to super spiced - tortilla chips will always be a favourite. Keep an eye on the broiler— a broiler can work fast, so watch the cheesy fries closely so they do not burn Don't be afraid to experiment with different types of cheese to find the perfect one for your needs. Which potatoes are recommended to use?

Ideal for a simple fast dinner, lunch, or supper with a pot of ketchup, mayonnaise, English or dijon mustard, or BBQ sauce. Whilst the chips are cooking cut the red onion in half, peel it and then slice it into half-moon shapes as finely as you can.

Meanwhile, spray a frying pan with a generous amount of low calorie cooking spray, then add the chopped peppers, bacon, onions, Worcestershire sauce and remaining Cajun seasoning.

Swap or skip any ingredient you do not like —bacon cheddar fries are even better when you love all the ingredients included. This recipe won’t make you magically like ranch or jalapenos, so swap or skip them if you don’t like them

Once the chips are done, sprinkle them with mozzarella or cheddar cheese, then add the bacon lardons on top. Ideally, you want to eat loaded fries with your fingers. A key appeal of this dish is that it allows you to disavow parental authority and the arid discipline of the bourgeois western dining table – and dig greedily and unapologetically in with your fingers. Mix the cornflour, salt and 2 teaspoons of the smoked paprika together in a large bowl. Add the sweet potatoes and mix well to coat. What are loaded fries?

It may sound very naughty, but as they are baked rather than deep fried, oven chips have far less fat. I always make a smaller portion than the massive ones from the chippie (one portion from our local is bigger than what I cook for two). You can make your own accompaniments. We’re all allowed a little indulgence now and again, so sling on the toppings that you love and enjoy!
